HOMEMADE PRESERVES & CONSERVES
Homemade tomato relish (or any other preserve, conserve or pickle) topped with vintage fabric cover, twine and kitsch souvenir spoon. Here’s our favourite tomato relish recipe – we used it at Erin’s wedding!
Tomato relish recipe from the P.W.M.U Cookery Book
- 12 ripe tomatoes
- 4 large onions
- 1 teaspoon curry powder
- 1/2 teaspoon mustard
- 450gm sugar
- 1 pinch of salt
- 5 chillies
- Cayenne pepper to taste
- Splash of vinegar
Cut tomatoes and onions to the size of walnuts, sprinkle with salt and stand overnight. In the morning, drain off the liquid, boil for 5 minutes with the sugar and splash of vinegar to cover. Add the remaining ingredients and boil for an hour. Then bottle in sterilised jars when cool and seal.
